Meat Marinades and Rubs

Using flavoured liquids or rubs for marinating or basting meats can help add variety to what you cook and allows you to get creative.

Marinades

Marinating is the process of soaking foods in a seasoned, often acidic, liquid before cooking. It infuses the food with extra flavour and can even help keep moisture in what you are cooking.

Veal with rosemary and mustard crust

Some ingredients in marinades may begin cooking the meat, such as acid or salt. When marinating in acidic or salty mixtures you must keep the marinade time to a minimum, but you can baste the meat with the remaining marinade as it cooks to make the most out of the ingredients.

There are a huge variety of marinades to try. There are Asian inspired marinades, with soy sauce, honey, chopped ginger, olive oil and sesame oil. Or Mexican inspired marinades with fresh lime juice, paprika, red chilli, chopped coriander, salt and pepper. Any style of marinade works well with garlic, chopped spring onions and thyme. It all adds extra flavour and works for practically every cooking method.

Rubs

Rubs are spice and herb mixes that are added to the meat before cooking to create added flavours. Rubs can be dry or with liquid added and are generally used in BBQing and smoking.

Mustard Crust

You can cook a mustard crust on a braise or roast. When Braising, sear the meat first to seal in the flavour and moisture. A mustard crust involves brushing the meat with a generous, even layer of Dijon mustard. Roast in the oven then rest at room temperature lightly covered with foil for 20 to 30 minutes before serving.
